Specialty Mushrooms

We grow our Mushrooms year-round indoors on our Farm. Our Mushrooms make a unique addition to your cooking and will make just about any dish shine. They have a great deal of nutritional value, are full of micronutrients, and we consider them among the SuperFoods. Mushrooms are low in carbohydrates and high in fiber. They are a good source of B-vitamins (riboflavin, pantothenic acid, and niacin), iron, and selenium.

Because we grow indoors you can expect our product to be of exceptional quality and clean of any dirt. We harvest 3 times a week and use a Certified Organic growing medium from Maine Cap and Stem. Our cultivation and harvest methods are committed to upholding the strictest standards in food safety.

What we Grow

  • Blue Oyster - An Oyster Mushroom known for it's culinary flexibility. Oyster mushrooms are beloved the world over for their delicate texture and mild, savory flavor. These mushrooms typically have broad, thin, oyster- or fan-shaped caps and are white, gray, or tan, with gills lining the underside.
  • Chestnut Mushroom - A hard to find delightful little mushroom native to the Mediterranean. Chestnut mushrooms have a mild earthy, nutty taste that pairs well with creamy dishes like risotto or a creamy pasta. They also are a natural for stir fries or add them to a nutritious and delicious broth.
  • King Oyster - An Oyster cultivated for its large stem which has the texture of a scallop. These mushrooms are the biggest we grow. The taste is mild and the mushroom is perfect as a meat substitute. We have customers who will marinate thick slices to grill or pan fry like you would scallops. A very unique and meaty variety!
  • Lion's Mane - One of our most popular cultivars, Lion's Mane is unique in many ways. Gaining popularity as a SuperFood- one that is a huge brain boost and can help fight cancer- Lion's Mane is a star in the making. Try this savory ingredient pan fried in butter or added to a soup. The flesh of the Lion's Mane resembles crab or lobster meat- try it as a fake 'crab-cake'- you won't be disappointed.
  • Shiitake - The most versatile mushroom we grow has a wonderful peppery taste raw and cooks beautifully in stir fry, grilled, or sautéed. Full of protein try them fried with garlic, onions, and in with your breakfast eggs.
